Quick and Simple Breakfast in Bed Ideas

There is nothing better than having extra time at the weekends to treat yourself to breakfast in bed. We share our simple and easy to follow recipes

Let's be honest, who doesn't love breakfast in bed? I wanted to share these super easy breakfast recipes with you because we all deserve to treat ourselves at the weekend. I'm not the most patient of cooks so I promise that these are incredibly quick and simple to follow. Let me know how you get on!

One-Cup American Pancakes

This is just the basic one up pancake recipe, feel free to jazz it up with bacon, fruit or chocolate chips.


What you'll need:

  • 1 large egg

  • 1 cup of self-raising flour

  • 1 cup of milk

  • Pinch of sea salt

  • Your chosen topping

Method:

  • Crack egg into a large mixing bowl

  • Add milk, flour and pinch of sea salt

  • Whisk until you have a smooth batter (if adding fruit, fold in after you've combined the ingredients)

  • Heat 1/2 tablespoon of oil in a large frying pan on a medium heat

  • Ladle in your batter, 1 ladle = 1 pancake

  • Leave to cook for about 1-2 minutes, when you see little bubbles it's time to flip!

  • Once the pancakes are golden on both sides remove and repeat the process with the rest of your batter

  • Now add your toppings of choice and enjoy!

Avocado, Scrambled Egg, Smoked Salmon Bagel

A slightly messier recipe compared to the pancakes, but trust me this breakfast is worth the extra washing up!

What you'll need:

  • Bagels

  • Ripe Avocado

  • Smoked Salmon

  • Eggs

  • Milk

  • Salt and pepper

  • Lemon

Method:

  • Slice your bagels in half and pop them in the toaster ready to toast a bit later

  • Whisk the eggs and milk together and season with salt and pepper

  • Take the avocado, slice in half and remove the stone (please be careful!)

  • Scoop the avocado into a bowl and mash

  • Get the bagels toasting

  • Heat a knob of butter in a small saucepan (be careful not to brown the butter)

  • Pour the egg mix into the saucepan and leave to sit for about 20 seconds

  • Stir the egg with a wooden spoon, remembering to lift and fold away from the bottom. Once the eggs are softly set they are ready

  • Spread the avocado onto the bagels, spoon on the scrambled egg and lay smoked salmon on top, season with a squeeze of lemon and hey presto you have a very tasty breakfast!
